Veggie Lasanga

Grill leeks, zucchini, and eggplant
Saute in olive oil, add salt and Italian seasoning
Add tomato paste with water, and a can of diced tomatoes with juice
Cook down
Grate cheese – Parmesan or like grate-able cheese
Layer fresca lasagna noodles
            Veggie tomato sauce
            Heavy Cream
            Grated cheese
In greased casserole pan, end with cheese, add extra and drizzle with oil
Bake until noodles tender, cheese melted, veggies cooked through
Let set and serve!

Variation: Instead of or with veggies, add canned tuna or any leftover fish on hand, fried, broiled, etc.

    i didn't realize you could gain weight by looking at pictures...
