Easter Monday Quiche

Pastry in tart pan
Mix cooked, drained, chopped spinach, cubed ham, and eggs
Pour into pastry
Place hard boiled eggs into quiche, about 5 or 6
Top with sliced cheese pieces
Bake

Risen

Eggplant Parmesana

Place grilled eggplant slices in bottom of greased dish
Layer eggplant, grated cheese, diced canned tomatoes, and sliced cheese
End with grated cheese, drizzle with oil and bake

Pizza


Dawn’s perfect pizza crust!
1 envelope baker’s yeast, a little salt, a little sugar, dissolve in warm water until bubbly, about 5 minutes, add enough flour to where the dough stats to come away from the sides of the bowl and form a ball, maybe a pound or so, let rise two hours or more. Roll out very thin and place on greased baking sheets, folding edges over for crust if desired.

Milano!


I arrived in Milano at about noon on Wednesday, and I only had one hiccup in my traveling, I must be getting better! Dawn met me at the Centrale station, and took me and my giant pink bag home. I just cannot express how thrilled I was to see her and be with the Italian branch of my family!
I had the most wonderful hot bath, my first since arriving in Italy, and felt just like a princess! Y'all know how I love my hot hot water. Then Dawn took me to downtown Milano, and we walked all around everywhere. This is Leonardo da Vinci! 


Fun story about this mosaic: legend has it that if you step on the bull's balls and spin, you'll have good luck. Haha, I couldn't resist!
The gorgeous Duomo and the fancy schmancy stores downtown (like Armani!) and then home again on the tram. I love these old wooden ones!

 
 
Homemade Pizza for dinner with Andrea, Dawn’s husband and son David, and then we went to meet their daughter Miriam at the train station as she got back from her school trip to Rome! Quite simply, a wonderful day.

This is an old abandoned cascina, the word for this kind of farmhouse that is typical to the Piemonte region. The barn is two-story and built right next to the house, and the red-tiled roof slants all the way down the back to provide shelter for the stock.
