Vin Santo

Sunday afternoon we bottled the Vin Santo, the holy wine.


It is made from grapes that have dried on the vine, becoming raisins, and then fermented for two years. So each batch of holy wine takes three years, one year for the harvest and drying, and two for the fermentation. It is a sweet wine, absolutely delicious, it tastes a little like nectar. Guido says that it’s called the holy wine because it was traditionally used for the Mass.
